Right now I’m having an açai bowl obsession. Açai is a superfood packed with antioxidants and this recipe is so incredibly creamy & simply deliciously.
1 & 1/2 bananas
1/2 cup frozen blackberries
1/2 cup frozen blueberries
1 tsp açai powder
1/2 cup almond milk

Having to bring my meals on-the-go is not my favourite thing…at all…but sometimes I just have to suck it up and make it fun!
1/2 cup quinoa cooked in water and 1 tsp apple cider vinegar, mixed with almonds, cranberries, olive oil & cinnamon topped with Brussels sprouts cooked in maple syrup and brown sugar for dinner in class tonight.

1/3 of a cucumber
3 celery stalks
RIGHT: Orange Ginger Juice🍊
1 inch ginger root
3 large carrots
The green juice was pre-breakfast fuel, and the orange juice was to sit throughout the day!
My #beautiful juice this morning made with 4 kale leaves, 2 apples, 1/4 cucumber, 1/2 lime, & 1/2 inch ginger root, juiced.
Feeling #blessed lately to be waking up with loads of energy, a clear mind and no more headaches!! Even though it’s winter, let’s still remember to #hydrate and #fuel our bodies💚

Hummus & Quinoa Flax Crackers
Recipe for hummus:
1/2 can chickpeas (“skinned”)
3 tbsp olive oil
1/2 tsp cumin
Salt to taste
2 tbsp tahini & 1/2 lemon juiced is optional

Who said healthy needs to be boring!? My beautiful lunch today was absolutely scrumptious, completely affordable, and was so easy to make.
*scrambled eggs w/ cayenne pepper*, rocket, fresh strawberries (eek!!), tomato, avo for some healthy fats, *butternut squash fries* w/ homemade vegan ketchup and lemon infused water to cleanse ✌️

Creamy Butternut Squash & Pear Soup:
This recipe was inspired by my lovely Spanish friend, Rocio!
1/2 butternut squash, massaged in coconut oil and baked
1/2 yam, baked
2 carrots, steamed
3/4 of a can of coconut milk
1 raw pear
Blend all ingredients (except pear) in a food processor or some sort of blending device. Top with coconut cream, parsley, and sprinkle with desired spices (I like nutmeg). Chop pear and sprinkle in soup (leave raw or bake with brown sugar)
This soup is very thick and serves as a great starter dish for dinner parties, or a nice warm dish when it’s rainy out.
Serves 2 main dishes OR 4 side dishes.
I just had to post this because it is the most beautiful place I have ever seen.
The last 3 days have been crazy busy at work, cooking and tasting potential menu items for a healthy restaurant I am working with to renovate/ start up! Now time to relax because tomorrow is cooking day for the upcoming blog! I will soon be in a food coma.

Blackberry Date Mylk🌸
1/4 cup frozen blackberries
1/2 a frozen banana
1 tbsp hemp seeds
1/3 cup nutracleanse mix
500 ml water
250 ml unsweetened almond milk
Blend and serve with goji berries. A light and refreshing drink, add more water to make more than just 1 jar.
Blueberry Superfood Smoothie:
1 cup frozen blueberries
1 cup spinach
2 tbsp hemp hearts
1 cup soy milk (non-GMO & organic)
500ml water or coconut water
2 tbsp shredded coconut, to serve
Repost of this lovely Pumpkin Carrot Coconut soup we made on Majorca last year. Topped with coconut cream, pumpkin seeds and fresh herbs with a glass of refreshing rice milk on the side. I should seriously consider making it soon!!

I made @healing_belle’s TWP Buckwheat, Pear and Maca loaf but with raspberries instead! I paired it with some homemade raspberry jam as well as some pumpkin butter. Turned out so delicious but I’m not surprised because everything from The Whole Pantry app is amazing 💕
